Sear Steakhouse & Lounge will hand guests aprons and knives on Sunday, Aug. 9, when executive chef Marcus Moehler leads the Harbor District restaurant's first-ever butchering class to benefit the Children's Advocacy Center for Rockwall County.

The inaugural Art of the Cut event transforms the fine-dining spot at 2101 Summer Lee Drive, Suite 109, into a hands-on classroom where participants learn professional butchering techniques and how to prepare and cook steaks at home, according to the Rockwall Herald-Banner. Each guest walks out with 6 pounds of premium Allen Brothers strip steak or ribeye, 2 pounds of rendered tallow, and two complimentary old fashioned cocktails.

Moehler, who moved to Rockwall in 2010 and joined the Rockwall High School culinary arts program in 2014, later trained at a one-Michelin-star restaurant in Spain before returning to work kitchens at Nobu Dallas, Uchi, and Georgie by Curtis Stone, according to a Living Magazine profile. He has led Sear's kitchen since the restaurant opened in December 2022.

Two butchering sessions are scheduled. The first, from 1 to 4 p.m., is billed as an individual experience. The second, from 5 to 8 p.m., is a couples session that adds a cooking component, according to a Children's Advocacy Center Facebook post promoting the event.

Guests who want to skip the knives can buy a wine-tasting-only ticket for the evening session. That tasting features more than 25 wines presented by five wine experts, each pouring four or five selections, along with live music and light bites. Attendees must be 21 or older.

A percentage of proceeds benefits the Children's Advocacy Center for Rockwall County, which provides forensic interviews, victim advocacy, and counseling referrals for children who have experienced abuse.

Owner Gail Fletcher and Moehler are both listed as hosts on the CAC's promotional materials. The restaurant's events page describes the evening as an exclusive culinary craftsmanship experience benefiting the center.
